  • Skill Level: Easy

Ingredients

  • 8 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumbers
  • 1 cup shredded purple cabbage
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh basil leaves
  • 1 cup cooked vermicelli noodles
  • 1/2 cup crushed peanuts (optional, for garnish)
  • For the Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon lime juice
  • 1-2 tablespoons warm water (to thin the sauce)
  • 1 teaspoon sriracha (optional, for a hint of heat)

Instructions

  • Prepare all your veggies and herbs, arranging them on a large plate or cutting board for easy access.
  • In a small bowl, whisk together the peanut butter, soy sauce, hoisin sauce, lime juice, warm water, and sriracha until smooth. Adjust the consistency with more water if needed.
  • Fill a shallow dish or pie plate with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds, just until it softens.
  • Place the softened wrapper on a clean, damp kitchen towel or a plastic cutting board.
  • Layer a small amount of carrots, cucumbers, cabbage, herbs, and noodles in the center of the wrapper, keeping the pile narrow and compact.
  • Fold the left and right sides of the wrapper over the filling, then gently roll from the bottom upwards, tucking in the filling as you go. Repeat with remaining wrappers and fillings.
  • Arrange the spring rolls on a serving plate, garnishing with crushed peanuts if desired. Serve with the peanut dipping sauce.

Helpful Tips

For an extra burst of flavor, try adding thinly sliced avocado or mango to your spring rolls. If you’re new to using rice paper wrappers, don’t worry! It may take a couple of tries to get the rolling technique right, but you’ll be a pro in no time.

If you’re preparing these rolls in advance, store them in the refrigerator covered with a damp cloth to prevent them from drying out. Peanut sauce can be kept in an airtight container in the fridge for up to a week.
