Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Servings: 2

Skill Level: Easy

Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 small red bell pepper, diced
  • 1 small yellow bell pepper, diced
  • 1 cup fresh spinach, chopped
  • 2 large eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  2. Heat olive oil in a non-stick skillet over medium heat. Add the diced bell peppers and cook until they are tender, around 3-4 minutes.
  3. Add the chopped spinach to the skillet and cook for another 1-2 minutes until wilted. Remove the vegetables from the skillet and set aside.
  4. Pour the egg mixture into the same skillet. Scramble the eggs until they are just set but still soft, then mix in the cooked vegetables.
  5. Place one tortilla in a separate clean skillet over medium heat. Scatter half of the shredded cheese over the tortilla.
  6. Spread the egg and vegetable mixture evenly over the cheese layer, then sprinkle the remaining cheese on top.
  7. Top the quesadilla with the second tortilla. Cook until the bottom tortilla is golden-brown and crispy, about 2-3 minutes, then carefully flip the quesadilla using a large spatula. Cook the other side for another 2-3 minutes until golden and the cheese is melted.
  8. Remove the quesadilla from the skillet and place it on a cutting board. Let it cool for a minute before cutting it into neat triangles. Garnish with fresh herbs if desired, and serve immediately.

Helpful Tips

  • For a protein boost, add some cooked chicken or black beans to the filling.
  • If you prefer a spicier kick, include some diced jalapeños or a pinch of chili flakes.
  • This recipe can easily be made dairy-free by using a plant-based cheese substitute.

Storage Instructions

Store any leftover quesadilla slices in an airtight container in the refrigerator for up to 2 days. Reheat them in a skillet or microwave before serving.

Pairings

Pair this Veggie-Packed Breakfast Quesadilla with a side of fresh fruit salad and a glass of freshly squeezed orange juice. It also goes wonderfully with a dollop of sour cream or guacamole for extra flavor.
