- 1 cup dried brown or green lentils, rinsed and drained
- 2 cups vegetable broth

- 1 bell pepper, finely chopped

- 1 can (15 oz) tomato sauce
- 1 tablespoon tomato paste
- 2 tablespoons maple syrup
- 1 tablespoon yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 6 whole wheat burger buns
- In a medium saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender. Drain any excess liquid.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add onions and bell pepper, and sauté until they are soft, about 5-7 minutes.
- Add garlic to the skillet and continue to cook for an additional minute, until fragrant.
- Stir in the cooked lentils, tomato sauce, and tomato paste. Mix well to combine.
- Add maple syrup, mustard, apple cider vinegar, smoked paprika, chili powder, salt, and pepper. Stir until everything is well incorporated.
- Reduce the heat and let the mixture simmer for another 10-15 minutes, allowing the flavors to meld together.
