Skill Level: Easy

Ingredients

  • 2 tablespoons olive oil
  • 1 pound turkey breast, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening sauce)
  • Salt and pepper to taste
  • Sesame seeds and chopped scallions for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Heat 1 tablespoon of olive oil in a large wok or skillet over medium-high heat.
  2. Add the turkey slices and season with salt and pepper. Stir-fry until the turkey is just cooked through and lightly browned. Remove and set aside.
  3. In the same wok, add the remaining olive oil along with garlic and ginger. Sauté for about 30 seconds until fragrant.
  4. Add the bell peppers, broccoli, and snap peas. Stir-fry for about 4-5 minutes or until tender-crisp.
  5. Return the turkey slices to the wok, mixing them with the vegetables.
  6. In a small bowl, combine soy sauce, honey, and sesame oil. Pour over the turkey and vegetable mixture.
  7. If you prefer a thicker sauce, add the cornstarch mixture and cook until the sauce is glossy and coats the ingredients well.
  8. Taste and adjust seasoning with additional salt and pepper if needed.
  9. Serve hot over cooked rice or noodles, garnished with sesame seeds and chopped scallions.

Helpful Tips

For a more personalized twist, you can swap the vegetables with your family’s favorites. Zucchini, carrots, or mushrooms are excellent options. If you prefer a spicier kick, add some red pepper flakes or Sriracha sauce. Make sure to slice the turkey and vegetables uniformly for even cooking.

Storage Instructions

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium heat, adding a splash of water if necessary to maintain the sauce consistency.

Pairings

This dish pairs wonderfully with jasmine rice or quinoa. Complement it with a light Asian-inspired cucumber salad and a refreshing glass of ginger iced tea for a harmonious meal.
