Ingredients

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, sliced
  • 1 celery stalk, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic, carrot, and celery, and cook for another 5 minutes, stirring occasionally.
