- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup pineapple chunks
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 cup rice vinegar
- 1/4 cup ketchup
- 3 tablespoons brown sugar
- 1/2 cup water
- 1 tablespoon cornstarch, mixed with 1 tablespoon water (slurry)
- In a medium bowl, gently mix tofu cubes with soy sauce and 1 tablespoon of cornstarch until well coated.
- Heat 2 tablespoons of vegetable oil in a large non-stick pan over medium-high heat. Add tofu cubes and cook until all sides are golden and crispy, about 6-8 minutes. Remove tofu and set aside.
- In the same pan, add a bit more oil if needed and stir-fry the bell peppers, pineapple chunks, and onion for 4-5 minutes until slightly tender.
- Add the minced garlic and cook for another minute until fragrant.
- In a separate bowl, combine rice vinegar, ketchup, brown sugar, and water. Pour this mixture into the pan with the vegetables and bring it to a simmer.
- Stir in the cornstarch slurry and cook until the sauce thickens, about 2 minutes.
- Return the crispy tofu to the pan and gently toss until everything is well-coated with the sweet and sour sauce. Cook for another minute to ensure all elements are heated through.
