Ingredients
- 4 large bell peppers (any color)
- 1 pound ground beef

Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until fragrant and translucent, about 3-4 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. This should take about 5-7 minutes.
- Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and pepper. Mix until well combined and heated through. Remove from heat.
- Fill each bell pepper with the beef and rice mixture, pressing down to pack the filling tightly.
- Place the stuffed peppers in a baking dish and top each with shredded mozzarella cheese.
- Cover the dish with aluminum foil and bake in the preheated oven for about 30 minutes, then remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and golden.
- Garnish with freshly chopped parsley before serving.
