  • 1 cup whole milk
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp red chili flakes
  • 1 fresh jalapeño, sliced
  • Salt and pepper to taste
  • Hot sauce, to garnish
  • Finely chopped green onions, for garnish

Instructions:

  1. Heat a large pot over medium heat and add the olive oil and butter. Once melted, add the chopped onion and cook until soft and translucent, about 5 minutes.
  2. Add the minced garlic and grated carrot, cooking for another 3 minutes until fragrant.
  3. Add the broccoli florets and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15 minutes until the broccoli is tender.
  4. Use an immersion blender to puree the soup until smooth. For a chunkier texture, blend only half the soup and leave the rest as is.
  5. Stir in the shredded cheddar cheese and milk, allowing the cheese to melt completely. Season with salt, pepper, and red chili flakes to taste.
  6. Ladle the soup into bowls and garnish with a drizzle of hot sauce, sliced jalapeño, and finely chopped green onions. Serve hot.

  • If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender.
