Instructions:
- Heat a large pot over medium heat and add the olive oil and butter. Once melted, add the chopped onion and cook until soft and translucent, about 5 minutes.
- Add the minced garlic and grated carrot, cooking for another 3 minutes until fragrant.
- Add the broccoli florets and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15 minutes until the broccoli is tender.
- Use an immersion blender to puree the soup until smooth. For a chunkier texture, blend only half the soup and leave the rest as is.
- Stir in the shredded cheddar cheese and milk, allowing the cheese to melt completely. Season with salt, pepper, and red chili flakes to taste.
