Skill Level: Intermediate
Ingredients
- 1 sheet of puff pastry, thawed
- 3 ripe but firm pears, peeled, cored, and thinly sliced
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 cup almond flour
- 2 tablespoons all-purpose flour
- 1/4 cup unsalted butter, softened
- 1/4 cup honey
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 tablespoon sliced almonds (optional)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface to fit the prepared baking sheet. Place the pastry on the parchment-lined sheet.
- In a small bowl, mix together the granulated sugar, cinnamon, nutmeg, and ginger. Set aside.
- In another bowl, combine the almond flour, all-purpose flour, softened butter, honey, beaten egg, and vanilla extract. Mix until creamy and well combined.
- Spread the almond cream evenly over the puff pastry, leaving a 1-inch border around the edges.
- Arrange the pear slices in a circular pattern on top of the almond cream. Sprinkle the spiced sugar mixture evenly over the pears.
- Fold the edges of the puff pastry over the filling to create a rustic border. Brush the pastry edges with a little beaten egg for a beautiful golden crust.
- If using, sprinkle sliced almonds over the top of the tart.
- Bake for 35-40 minutes, until the pastry is golden and the pears are tender.
- Allow the tart to cool slightly, then dust with powdered sugar before serving.
Helpful Tips
- If you don’t have almond flour, you can substitute with finely ground blanched almonds.
- For a quick twist, use pre-made frangipane (almond cream) available in specialty stores.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
- Feel free to swap pears with apples for a different yet equally delightful experience.
Pairings
This Spiced Pear Tart pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream. For a beverage, consider serving it with a warm cup of spiced chai or a glass of crisp, chilled Riesling.
