Instructions
- Heat the olive oil in a large skillet or saucepan over medium heat. Add the onion and garlic, and sauté until they are soft and fragrant, about 5 minutes.

- Add the black beans, diced tomatoes (with juice), and vegetable broth. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 25 minutes or until the rice is cooked through and the liquid is absorbed.
- Season with salt and pepper to taste. Fluff the rice with a fork and let it sit off the heat for a few minutes.
