Ingredients
- 1 lb chicken breast or thigh, cut into 1-inch cubes
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper, to taste
- 4 pita breads
- 1 cup tzatziki sauce
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a large bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper.
- Add the chicken cubes to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill to medium-high heat. Thread the marinated chicken onto the soaked wooden skewers.
- Grill the skewers for about 5-7 minutes on each side, or until the chicken is fully cooked and has a nice char.
- While the chicken is grilling, warm the pita breads on the grill for about 1-2 minutes per side.
- Once the chicken is done, serve the skewers hot with warm pita bread and a generous dollop of tzatziki sauce.
Helpful Tips
- You can substitute the chicken with beef or lamb for a different flavor profile.
- If using metal skewers, there’s no need to soak them before grilling.
- Add some colorful bell peppers and onions to the skewers for added flavor and a burst of color.
Storage & Substitutions
- Store any leftover souvlaki in an airtight container in the refrigerator for up to 2 days.
- To reheat, simply warm on the stovetop or in the oven until heated through.
- Feel free to use dairy-free yogurt for the tzatziki sauce if you prefer it.
Pairings
- Pair with a fresh Greek salad for a complete meal.
- A chilled glass of lemonade or iced tea complements the flavors beautifully.
- Serve alongside grilled vegetables for a heartier option.
