  • Skill Level: Intermediate

Ingredients

  • 1/2 cup heavy cream
  • 8 oz dark chocolate, finely chopped
  • 1/4 cup salted caramel Crown Royal
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt, plus more for garnish
  • 2 tbsp unsalted butter, at room temperature
  • 1/4 cup cocoa powder, for rolling

Instructions

  1. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.
  2. Place the chopped dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate, letting it sit for a few minutes to melt.
  3. Stir until the chocolate is fully melted and the mixture is smooth.
  4. Add the salted caramel Crown Royal, vanilla extract, sea salt, and unsalted butter. Stir until well combined.
  5. Let the mixture cool to room temperature, then refrigerate for 2-3 hours or until firm.
  6. Using a small cookie scoop or spoon, scoop out the mixture and roll it into balls. Place on a baking sheet lined with parchment paper.
  7. Roll each ball in cocoa powder to coat, then sprinkle lightly with sea salt.
  8. Refrigerate the truffles for another 30 minutes to set.

Helpful Tips

If you find the mixture too sticky to roll, lightly coat your hands with cocoa powder or wear gloves. For a variety, try rolling the truffles in finely chopped nuts or drizzling with melted chocolate. Substitute Crown Royal with your favorite whiskey or bourbon for a new twist!

Storage Instructions

Store truffles in an airtight container in the refrigerator for up to two weeks. For longer storage, freeze truffles for up to three months and thaw in the refrigerator before serving.

Pairings

These truffles pair beautifully with a glass of Cabernet Sauvignon, dark roast coffee, or even more Crown Royal on the rocks. For a complete dessert spread, serve alongside a cheese platter or fresh fruit.
