- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 tablespoons sesame seeds, for garnish
- Fresh herbs (parsley or cilantro), for garnish
- 1 cup cooked quinoa or rice, for serving
- 1/2 cup tahini
- 1/4 cup lemon juice
- 2 tablespoons water
- 1 clove garlic, minced
- 1 tablespoon maple syrup or honey
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the sliced bell peppers, carrots, zucchini, and cherry tomatoes on the baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
- Roast in the preheated oven for 20-25 minutes or until the vegetables are tender and lightly caramelized.

- Serve immediately and enjoy your colorful, nutritious meal!
Helpful Tips
For a more crunch, you can add raw veggies like shredded red cabbage or sliced radishes. If you’re short on time, store-bought tahini sauce can be a great substitute. This recipe is highly versatile – feel free to use any seasonal vegetables you have on hand!
Storage Instructions
Store any leftovers in an airtight container in the fridge for up to 3 days. Keep the tahini sauce separate to avoid the veggies becoming soggy.
Pairings
