Ingredients
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon turmeric
- 3 large carrots, peeled and cut into chunks
- 2 large potatoes, peeled and cubed
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 3 cups vegetable broth
- 1/2 cup dried apricots, chopped
- Salt and pepper to taste
- Fresh cilantro or parsley, for garnish
- Cooked couscous or crusty bread, for serving
Instructions
- Heat the olive oil in a large pot or tagine over medium heat. Add the chopped onion and minced garlic, sautéing until translucent and fragrant, about 5 minutes.
- Stir in the ground cumin, ground coriander, ground cinnamon, ground ginger, and turmeric. Cook for another minute, allowing the spices to bloom.
- Add the carrots and potatoes to the pot, stirring to coat the vegetables in the spices. Cook for about 5 minutes.
- Add the chickpeas, diced tomatoes, vegetable broth, and dried apricots. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let cook for 30 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste. Garnish with fresh cilantro or parsley before serving.
- Serve hot with cooked couscous or crusty bread on the side.
