Instructions

  1. Heat the oil in a large pan over medium heat. Add cumin seeds and allow them to sizzle.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the ginger-garlic paste and cook for 2 minutes until the raw smell disappears.
  4. Add the pureed tomatoes and cook until the oil separates from the masala.
  5. Add coriander powder, turmeric powder, red chili powder, and salt. Stir well to combine.
  6. Add the chicken pieces and cook for 5-6 minutes, stirring occasionally until they are lightly browned.
  7. Mix in the whisked yogurt and cook for another 5 minutes.
  8. Add fresh fenugreek leaves, stir to combine, and cook for 10-15 minutes until the chicken is fully cooked and tender.
  9. Garnish with fresh coriander leaves and serve hot with roti and a side of raita.

Helpful Tips

  • For a milder version, reduce the amount of red chili powder.
  • Dry fenugreek leaves (kasuri methi) can be used if fresh leaves are unavailable. Use 2 tablespoons.
  • To make the dish creamier, add a splash of heavy cream before serving.

Storage Instructions

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat thoroughly before serving.
