- 1 large lemon, quartered
- 8 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup chicken broth
- Fresh herbs (parsley or thyme) for garnish
- Additional lemon slices for garnish
- Preheat your oven to 375°F (190°C). Remove any giblets from the chicken cavity and pat the chicken dry with paper towels.
