Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup fresh or frozen blueberries
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a medium bowl, combine 1 cup flour, 1/4 cup sugar, and 1/4 teaspoon salt. Mix in the melted butter until evenly combined.
- Press the mixture into the bottom of the prepared baking dish to form a crust. Bake for 15-18 minutes or until lightly browned.
- While the crust is baking, prepare the filling. In another bowl, whisk together 1 cup sugar, 2 tablespoons flour, and 1/4 teaspoon salt.
- Add the eggs, lemon juice, and lemon zest, and whisk until smooth and well-combined.
- Once the crust is ready, remove it from the oven. Scatter the blueberries evenly over the crust.
- Pour the lemon mixture over the blueberries and return the dish to the oven. Bake for 20-25 minutes or until the filling is set.
- Allow the bars to cool completely in the baking dish before cutting into squares. Dust with powdered sugar if desired.
Helpful Tips
- Make it Gluten-Free: Substitute the all-purpose flour with a 1:1 gluten-free flour blend.
- Fresh vs Frozen: If using frozen blueberries, do not thaw them to prevent bleeding into the filling.
- Extra Zest: For an added burst of citrus, sprinkle additional lemon zest on top before serving.
Storage Instructions & Ingredient Substitutions
Store the Lemon Blueberry Bars in an airtight container in the refrigerator for up to 5 days. If you prefer a dairy-free version, use dairy-free butter or coconut oil in place of the unsalted butter.
Pairings
These Lemon Blueberry Bars pair wonderfully with a cup of hot tea or a refreshing glass of iced lemon water. For a more indulgent experience, serve them alongside a scoop of vanilla ice cream or a dollop of whipped cream.
