- 1 can (28 oz) crushed tomatoes
- 1 cup small pasta (such as ditalini or orzo)
- 1 handful spinach, roughly chopped
- Fresh basil, for garnish
- Grated Parmesan, for serving
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
- Heat olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides. Remove and set aside.
- In the same pot, add the onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Pour in the chicken broth and crushed tomatoes. Bring to a boil, then reduce the heat and simmer for 15 minutes.
