Instructions

  1. Set up the Instant Pot with the trivet inside and pour in the 2 cups of water.
  2. In a saucepan over medium heat, melt the sugar until it turns into a golden caramel, stirring occasionally to avoid burning.
  3. Quickly pour the caramel into a heatproof round dish that fits into your Instant Pot, swirling it to coat the bottom evenly. Set aside to cool slightly.
  4. In a blender, combine the sweetened condensed milk, evaporated milk, eggs, vanilla extract, and salt. Blend until smooth.
  5. Gently pour the milk mixture over the caramel layer in the dish.
  6. Cover the dish tightly with aluminum foil to prevent water from getting in.
  7. Place the dish on the trivet inside the Instant Pot. Close the lid and set the valve to the sealing position.
  8. Cook on Manual high pressure for 15 minutes. Once done, allow a natural pressure release for 10 minutes before carefully releasing any remaining pressure.
  9. Remove the dish from the Instant Pot and let it cool to room temperature. Refrigerate for at least 4 hours or overnight for best results.
  10. To serve, run a knife around the edges of the flan, invert it onto a plate, allowing the caramel to drizzle over the top beautifully.

Helpful Tips

  • To avoid a burnt caramel, keep a close eye on the sugar while melting. It changes color quickly!
  • If the caramel hardens before you pour in the custard, simply reheat it gently until it softens.
  • For a flavor twist, you can add a splash of orange zest or a hint of cinnamon to the custard mixture.

Storage Instructions

  • Store any leftovers in the refrigerator, covered with plastic wrap, for up to 3 days.
  • Unfortunately, flan does not freeze well due to its delicate custard nature.
