  2. Slice the tops off the tomatoes and scoop out the insides, creating a hollow center. Set the tomato tops and insides aside for another use.
  3. In a large mixing bowl, combine the cooked quinoa, chopped spinach, crumbled feta, minced garlic, and olive oil. Season with dried oregano, salt, and pepper.
  4. Stuff each hollowed-out tomato with the quinoa mixture, pressing down gently to fill completely.
