Recipe Summary
- Prep Time: 30 minutes
- Cook Time: 45 minutes
- Total Time: 1 hour 15 minutes
- Servings: 4-6
- Skill Level: Intermediate
Ingredients:
- 1 jar (16 oz) grape leaves, rinsed
- 1 cup long grain rice, rinsed and drained
- 1 large onion, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh dill, finely chopped
- 1/4 cup fresh mint, finely chopped
- 1 teaspoon ground allspice
- 1 teaspoon black pepper
- Juice of 2 lemons
- 1/2 cup olive oil, divided
- 1 cup vegetable broth
- Salt to taste
- Lemon slices and fresh dill for garnish

Instructions:
- Prepare the filling: In a large bowl, combine the rinsed rice, chopped onion, parsley, dill, mint, ground allspice, black pepper, juice of 1 lemon, 1/4 cup olive oil, and salt. Mix well.
- Lay a grape leaf shiny side down on a flat surface. Place about a tablespoon of the filling in the center of the leaf. Fold the sides over the filling and roll up tightly from the bottom, taking care not to tear the leaf. Repeat with the remaining leaves and filling.
- Line the bottom of a large pot with unused or torn grape leaves. Arrange the rolled dolmas seam side down in snug layers.
- Drizzle the remaining olive oil and the juice of the second lemon over the dolmas. Pour in the vegetable broth until the dolmas are just covered.
- Place a heatproof plate on top of the dolmas to keep them from unrolling during cooking. Cover the pot and bring to a gentle simmer over medium heat. Reduce the heat to low and cook for 45 minutes, or until the rice is tender.
- Allow the dolmas to cool slightly before serving. Transfer to a platter, drizzle with any remaining cooking liquid, and garnish with lemon slices and fresh dill.
Helpful Tips:
- If you can’t find grape leaves, cabbage leaves can be a good substitute.
- For a hint of sweetness, add currants or raisins to the filling.
- Dolmas can be served warm or at room temperature, making them perfect for gatherings.
Storage:
Store leftover dolmas in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to 2 months. Thaw in the refrigerator before serving.

Pairings:
Dolmas pair beautifully with a side of garlic yogurt sauce and a refreshing cucumber and tomato salad. For drinks, a cold glass of mint lemonade complements the flavors perfectly.
