  • 1/2 teaspoon turmeric
  • 4 cups vegetable broth
  • 1 cup coconut milk

  • Fresh cilantro leaves for garnish
  • Curry powder for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the onion and garlic until translucent and fragrant, about 5 minutes.
  2. Add the cubed butternut squash to the pot and cook for another 5 minutes, stirring occasionally.
  3. Stir in the curry powder, cumin, coriander, and turmeric. Cook for 2 minutes until the spices are well incorporated and aromatic.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for about 25-30 minutes or until the butternut squash is tender.
