Ingredients
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 1/4 cups whole milk
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder
- 1/2 cup strawberry puree
- Pink food coloring (optional)
- 3 cups buttercream frosting
- Fresh strawberries, for garnish
- Chocolate shavings, for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Stir in the vanilla extract.
- Divide the batter evenly into three bowls. In the first bowl, stir in the cocoa powder until well combined. In the second bowl, fold in the strawberry puree and a few drops of pink food coloring if desired. Leave the third bowl as is for the vanilla layer.
- Pour each batter into one of the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of each cake comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Once the cakes are completely cool, level the tops if necessary. Place the chocolate layer on your cake stand or serving plate and spread a thin layer of buttercream on top. Add the strawberry layer and spread another thin layer of buttercream. Finally, add the vanilla layer on top.
- Frost the sides and top of the cake with the remaining buttercream, smoothing it out with a spatula.
- Decorate the top of the cake with fresh strawberries and chocolate shavings.
