Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup Arborio rice
- 1/2 cup dry white wine
- 4 cups chicken broth, warmed
- 1 cup sliced mushrooms (cremini or button)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken and cook until golden brown. Remove the chicken from the pan and set aside.
- In the same pan, add the remaining tablespoon of olive oil. Sauté the chopped onion until translucent, then add the minced garlic and cook for another minute.
- Add the Arborio rice to the pan and stir continuously for 2-3 minutes until the rice is lightly toasted.
- Pour in the white wine and stir until completely absorbed by the rice.
- Gradually add the warmed chicken broth, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next.
- After about 15 minutes, add the sliced mushrooms and cooked chicken. Continue to add the rest of the broth and cook until the risotto is creamy and the rice is tender.
- Stir in the grated Parmesan cheese and butter. Season with salt and pepper to taste.
- Garnish with chopped fresh parsley and a sprinkle of extra Parmesan cheese. Serve warm.
Helpful Tips
- If you prefer a vegetarian version, you can replace the chicken with more mushrooms or vegetables like peas and asparagus.
- For a creamier texture, you can add an extra tablespoon of butter or a splash of cream at the end.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a bit of extra broth to loosen the risotto.
