Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Servings: 6
Skill Level: Easy
Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 cups carrots, sliced
- 2 tablespoons fresh ginger, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper, to taste
- Fresh herbs (parsley or cilantro), for garnish
- Optional: cream for garnish
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the sliced carrots and minced ginger, and cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth, bring to a boil, then reduce heat and let simmer until the carrots are tender, around 20 minutes.
- Remove from heat and let cool slightly. Using an immersion blender, blend the soup until smooth. Alternatively, transfer in batches to a blender and blend until smooth.
- Return the blended soup to the pot, stir in the coconut milk, and season with salt and pepper to taste. Reheat if necessary.
- Ladle the soup into bowls and garnish with a swirl of cream and fresh herbs.
Helpful Tips:
For a heartier version, consider adding a peeled and chopped sweet potato along with the carrots for a rich, velvety texture. Coconut milk adds a lovely creaminess, but you can substitute with heavy cream or even a plant-based milk if you prefer.
Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat gently on the stove or in the microwave before serving.
Pairings:
This Carrot Ginger Soup pairs beautifully with a side of crusty bread or a light, crisp salad. For beverages, a chilled glass of white wine or a warm herbal tea complements the soup’s flavors wonderfully.
