  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cups carrots, sliced

  • 4 cups vegetable broth
  • 1 cup coconut milk

Instructions:

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the sliced carrots and minced ginger, and cook for another 5 minutes, stirring occasionally.
  • Pour in the vegetable broth, bring to a boil, then reduce heat and let simmer until the carrots are tender, around 20 minutes.
  • Remove from heat and let cool slightly. Using an immersion blender, blend the soup until smooth. Alternatively, transfer in batches to a blender and blend until smooth.
  • Return the blended soup to the pot, stir in the coconut milk, and season with salt and pepper to taste. Reheat if necessary.
  • Ladle the soup into bowls and garnish with a swirl of cream and fresh herbs.
