Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it up with a spoon as it cooks, until browned, about 8-10 minutes.
  2. Drain any excess fat from the skillet and stir in the taco seasoning and a splash of water. Simmer for 2-3 minutes until well combined and fragrant.
  3. Meanwhile, prepare your rice according to package instructions.
  4. In a separate medium-sized pot, heat the black beans and corn kernels over medium heat until warmed through, about 5 minutes. Season with salt and pepper to taste.
  5. To assemble the burrito bowls, start by dividing the cooked rice among four bowls.
  6. Top each bowl with an equal portion of the seasoned beef, black beans, and corn mixture.
  7. Add shredded lettuce, diced tomatoes, red onions, cheese, fresh cilantro, salsa, and guacamole on top.
  8. Serve immediately with tortilla chips on the side if desired.

Helpful Tips:

For a healthier option, substitute the white rice with brown rice or quinoa. If you prefer a vegetarian version, omit the beef and add sautéed bell peppers and mushrooms instead. To save time, use store-bought salsa and guacamole, or make them ahead of time to enhance the homemade touch. Don’t be afraid to play around with toppings – bell peppers, pickled jalapenos, and a squeeze of lime juice can add extra zest to your bowls.

Storage Instructions:

Store any leftover components separately in airtight containers in the refrigerator for up to 3 days. Reheat the beef, rice, and beans before assembling your bowls. Fresh toppings like lettuce and tomatoes are best added just before serving to maintain their crisp texture.
