  • 4 large flour tortillas
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1 ripe avocado, sliced
  • 2 tablespoons butter
  • Salt and black pepper, to taste
  • Salsa, for serving
  • Sour cream, for serving

Instructions

  1. In a medium bowl, whisk the eggs and milk together until well combined. Season with a pinch of salt and black pepper.
  2. In a large non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, melt the remaining butter over medium heat. Place a tortilla in the skillet and sprinkle one half of it with 1/4 cup of shredded cheddar cheese.
  4. Top the cheese with a portion of the scrambled eggs and avocado slices. Sprinkle another 1/4 cup of cheese over the eggs and avocado.
  5. Fold the tortilla in half over the filling and cook until the bottom is golden brown and crispy, about 2-3 minutes. Flip and cook the other side until golden and the cheese is melted.
  6. Remove the quesadilla from the skillet and place it on a cutting board. Repeat with the remaining ingredients to make four quesadillas.
  7. Cut each quesadilla into triangles and serve on a rustic wooden board with sides of salsa and sour cream. Enjoy!
