Ingredients

  • 2 ripe avocados, peeled and pitted
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh lime juice (optional)
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onions become translucent and fragrant.
  2. Add the diced potatoes to the pot, stirring to coat them in the oil. Cook for about 5 minutes.
  3. Pour in the vegetable broth, bringing the mixture to a boil. Reduce the heat and let it simmer for 20 minutes or until the potatoes are tender.
  4. Once the potatoes are cooked, remove the pot from the heat. Add the peeled and pitted avocados to the pot.
  5. Using an immersion blender or transferring the mixture to a countertop blender in batches, blend until smooth and creamy.
  6. Return the pot to the stove over low heat. Stir in the heavy cream, adjusting the seasoning with salt and pepper to taste.
  7. If desired, add a squeeze of fresh lime juice for a burst of acidity and brightness.
  8. Serve the soup hot, garnished with fresh cilantro.

Helpful Tips

To make this recipe even easier for beginners, use pre-chopped onions and minced garlic from the store. For a lighter version, substitute the heavy cream with coconut milk. This soup can be stored in an airtight container in the refrigerator for up to three days. Reheat gently on the stove, adding a splash of broth if needed to adjust the consistency.

Pairings

This Avocado and Potato Soup pairs wonderfully with a fresh green salad and crusty bread. For drinks, consider serving it alongside a cold glass of white wine or a refreshing iced tea to complement the rich flavors.
