Ingredients
- 1 large head of cabbage
- 1 cup cooked rice
- 1 large carrot, finely grated
- 1 onion, finely chopped
- 1 bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, finely chopped
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 cups tomato sauce
- Salt and pepper to taste
- Fresh parsley, finely chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Carefully remove the leaves from the cabbage head, trying not to tear them. Blanch the cabbage leaves in boiling water for 2-3 minutes until just softened. Set aside to cool.
- In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and bell pepper. Sauté until softened.
- Add the grated carrot and mushrooms to the skillet. Cook for another 5 minutes until all vegetables are tender.
- Stir in the cooked rice, oregano, basil, salt, and pepper. Mix well and remove from heat.
- On a clean surface, lay out one cabbage leaf. Place a spoonful of the rice mixture at the bottom of the leaf, fold in the sides, and roll up tightly. Repeat with remaining leaves and filling.
- In a baking dish, spread a thin layer of tomato sauce. Arrange the cabbage rolls seam-side down in the dish. Pour the remaining tomato sauce over the rolls.
- Cover the dish with foil and bake for 1 hour, until the cabbage is tender and the filling is hot.
- Serve hot, garnished with fresh parsley.
