  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced apple, chopped onion, and minced garlic. Sauté for 5-7 minutes until the apple is soft and the onion is translucent.
  3. Add the chopped sage, breadcrumbs, and Parmesan cheese to the skillet. Stir well to combine. Season with salt and pepper to taste. Remove from heat and let it cool slightly.
  4. Using a sharp knife, carefully cut a horizontal pocket into each chicken breast, making sure not to cut all the way through.
  5. Fill each chicken breast with the apple and sage mixture, securing with toothpicks if necessary.
  6. Heat the remaining tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  7. Pour the chicken broth into the skillet around the chicken breasts.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  9. Remove from the oven and let the chicken rest for a few minutes before slicing and serving.
