Ingredients

  • 4 large bell peppers (any color)
  • 2 cups prepared Thanksgiving stuffing (homemade or store-bought)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken or vegetable broth
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the garlic and cook for another minute.
  4. Add the prepared stuffing to the skillet along with the thyme, sage, salt, and black pepper. Stir to combine.
  5. Pour in the chicken or vegetable broth and cook for another 2 minutes, until the mixture is heated through.
  6. Spoon the stuffing mixture into the bell peppers, packing it in tightly.
  7. Place the stuffed peppers in a baking dish. If desired, sprinkle the tops with grated Parmesan cheese.
  8. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, until the peppers are tender and the tops are slightly browned.
  9. Remove from the oven and let cool slightly before serving. Garnish with freshly chopped parsley.
