Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 2/3 cup freshly squeezed lemon juice (about 4-5 lemons)
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and line it with parchment paper, allowing excess to hang over the sides.
- In a medium bowl, beat the softened butter and 1/2 cup of granulated sugar together until creamy. Gradually add 2 cups of flour and salt, mixing until crumbly.
- Press the dough evenly into the prepared baking dish to form the shortbread crust. Bake for 20 minutes, or until lightly golden. Remove from oven and let cool slightly.
- In another bowl, whisk together the eggs, 1 1/2 cups sugar, 1/4 cup flour, and lemon juice until smooth. Pour the lemon mixture over the baked crust.
- Return the baking dish to the oven and bake for an additional 15 minutes, or until the filling is set and lightly browned around the edges.
- Allow the Lemon Bars to cool completely in the baking dish on a wire rack. Once cooled, dust generously with powdered sugar.
- Lift the bars out of the baking dish using the parchment paper overhang and cut into squares. Serve and enjoy!
Helpful Tips
- For an Easy Press: Use the bottom of a measuring cup to press the shortbread crust evenly into the baking dish.
- Extra Zing: Add a teaspoon of lemon zest to the filling for an extra burst of citrus flavor.
- Cool Completely: Ensure the bars cool completely before cutting to prevent them from falling apart.
Storage Instructions
Store Lemon Bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, freeze individual bars wrapped in parchment paper and placed in a freezer-safe container for up to 3 months.
Pairings
Enjoy these Lemon Bars with a cup of tea, a refreshing glass of lemonade, or a light and crisp white wine. They also pair wonderfully with fresh berries and a dollop of whipped cream.
