Ingredients

  • 1 lb ground beef
  • 6 slices turkey bacon, chopped
  • 2 large onions, thinly sliced
  • 2 tbsp balsamic vinegar
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh thyme, for garnish

Instructions

  1. In a large pot, heat 1 tbsp olive oil over medium heat. Add the ground beef and cook until browned. Remove the beef from the pot and set it aside.
  2. In the same pot, add the remaining olive oil and the turkey bacon. Cook until crispy, then set aside with the beef.
  3. Add the sliced onions to the pot. Cook until they start to soften, about 5 minutes. Add the balsamic vinegar and continue to cook, stirring occasionally, until the onions are caramelized and deeply golden, about 10 more minutes.
  4. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  5. Return the beef and bacon to the pot. Pour in the beef broth and bring the mixture to a simmer.
  6. Reduce the heat to low and stir in the milk and shredded cheddar cheese, stirring until the cheese is completely melted and the soup is smooth.
  7. Season with dried thyme, salt, and pepper to taste. Allow the soup to simmer gently for another 10 minutes to meld the flavors.
  8. Ladle the soup into bowls and garnish with fresh thyme. Serve hot.

Helpful Tips

You can use regular bacon instead of turkey bacon for a richer flavor. For a low-carb version, substitute the milk with heavy cream and reduce the amount of cheese.
