- 3 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon instant yeast
- 1 1/2 cups warm water
- 2 tablespoons olive oil
- 3 tablespoons za’atar seasoning
- In a large bowl, combine the flour, salt, and yeast. Mix well to ensure even distribution.
- Slowly add the warm water and olive oil. Stir with a wooden spoon until the mixture forms a sticky dough.
- Cover the bowl with plastic wrap or a damp towel. Let it rest at room temperature for 12-18 hours. The dough will rise and bubble, developing its flavors.
- Preheat the oven to 450°F (230°C). Place a Dutch oven (or any heavy oven-safe pot with a lid) inside to heat.
- Lightly flour a clean surface and gently turn the dough onto it. Shape the dough into a ball by folding the edges toward the center. Be careful not to deflate the bubbles formed during the resting period.
- Line a large piece of parchment paper with a sprinkle of flour and za’atar seasoning. Place the dough ball seam-side down onto the parchment paper and sprinkle more za’atar on top.
- Carefully remove the hot Dutch oven from the oven and transfer the dough, along with the parchment paper, into the pot. Cover with the lid and bake for 30 minutes.
- Remove the lid and bake for another 10-15 minutes until the crust is golden brown.
- Allow the bread to cool on a wire rack before slicing. Enjoy the fragrant, savory aroma of za’atar-infused bread.
- If you’re short on time, you can reduce the resting period to 8 hours, but the longer rest develops deeper flavors.
