  • ½ cup shredded cabbage
  • 1 small bell pepper, finely diced
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine flour, sugar, and yeast. Make a well in the center and pour in warm water and milk. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover with a damp cloth, and let rise for 1 hour or until doubled in size.
  3. While the dough is rising, prepare the filling. In a skillet, heat oil over medium heat. Add garlic and cook until fragrant.
  4. Add carrots, cabbage, bell pepper, and green onions. Stir-fry for 5-7 minutes until vegetables are tender. Stir in soy sauce, sesame oil, salt, and pepper. Remove from heat and let cool.
  5. Once the dough has risen, punch it down and divide into 12 equal pieces. Roll each piece into a ball, then flatten into a disc about 3 inches in diameter.
  6. Place a tablespoon of filling in the center of each disc. Gather the edges and pinch them together to seal, creating a pleated top.
  7. Arrange the bao in a bamboo steamer lined with parchment paper, leaving a bit of space between them to expand. Cover and let them rest for 10 minutes.
  8. Bring water to a boil in a pot suitable for the steamer. Place the steamer over the boiling water and steam the baos for 12-15 minutes until fluffy and cooked through.
  9. Carefully remove the steamer from the pot and let cool slightly before serving.
