- 1 large egg

Instructions
- In a medium saucepan, bring the milk to a gentle simmer over medium heat. If using a vanilla bean, add it to the milk at this point. Stir occasionally to prevent the milk from scorching.
- As the milk heats, whisk together the sugar, egg yolks, whole egg, cornstarch, and a pinch of salt in a mixing bowl until smooth and well combined.
- Once the milk is simmering, remove the vanilla bean if used. Gradually pour half of the hot milk into the egg mixture, whisking constantly to temper the eggs and avoid curdling.
- Pour the tempered egg mixture back into the saucepan with the remaining milk, continuing to whisk constantly.
- Cook the mixture over medium heat, stirring continuously, until it thickens to a custard-like consistency, about 4-5 minutes. The custard should coat the back of a spoon and leave a clear line when you run your finger through it.
- Remove the saucepan from heat and stir in the vanilla extract if you did not use a vanilla bean.
- Pour the custard into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming as it cools. Chill in the refrigerator for at least 2 hours before serving.
