Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the ground beef, egg, breadcrumbs, chopped onion, minced garlic, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 15 minutes or until they are browned and cooked through.
- While the meatballs are cooking, prepare the sweet and sour sauce. In a medium saucepan, combine the ketchup, apple cider vinegar, brown sugar, and soy sauce. Heat over medium heat, stirring until the sugar dissolves.
- Add the pineapple chunks and chopped bell pepper to the sauce. Bring to a simmer.
- In a small bowl, mix the cornstarch and water to create a slurry. Stir this into the sauce to thicken it.
- Once the meatballs are cooked, add them to the saucepan and coat them in the sauce. Let everything simmer together for an additional 10 minutes.
