Skill Level: Easy

Ingredients

  • 1 large spaghetti squash
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Carefully slice the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Brush the inside of the squash with olive oil and sprinkle with salt and pepper. Place the squash halves cut side down on a baking sheet and roast in the oven for 30-40 minutes until the flesh is tender and strands apart easily with a fork.
  3. While the squash is roasting, heat a large pan over medium heat and add the remaining olive oil. Add the diced onion and sauté until translucent.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Add the ground beef to the pan, breaking it up with a spoon. Cook until the beef is browned and cooked through.
  6. Stir in the crushed tomatoes, diced tomatoes, and tomato paste. Add the oregano, basil, salt, and pepper.
  7. Let the sauce simmer for 20-25 minutes, stirring occasionally. Adjust seasoning if necessary.
  8. Once the spaghetti squash is done, use a fork to shred the flesh into noodle-like strands.
  9. Divide the squash strands among serving dishes, top with the Bolognese sauce, and garnish with fresh basil leaves and Parmesan cheese if desired.

Helpful Tips

For an extra burst of flavor, consider adding a splash of red wine to the sauce as it simmers. If you’re short on time, you can cook the spaghetti squash in the microwave by placing it cut side down in a microwave-safe dish with a bit of water and microwaving on high for about 10-12 minutes.

Storage

Stored in an airtight container, the spaghetti squash and sauce can each last in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop before serving. You can also freeze the Bolognese sauce for up to 3 months.

Pairings

This Spaghetti Squash Bolognese pairs wonderfully with a crisp green salad and a side of garlic bread. For a drink, a glass of red wine complements the rich flavors perfectly.
