Ingredients

  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers (any color)
  • 1/4 cup diced onions
  • 1/4 cup fresh spinach, chopped
  • 1/4 cup cream or milk
  • Salt and pepper to taste
  • Chopped fresh chives for garnish

Instructions

  1. Preheat your sous vide machine to 172°F (78°C).
  2. In a medium bowl, whisk together the eggs, cream or milk, salt, and pepper until well combined.
  3. Stir in the shredded cheddar cheese, diced bell peppers, diced onions, and chopped spinach.
  4. Carefully pour the egg mixture into silicone egg bite molds, filling each cup about three-quarters full.
  5. Cover the egg bite molds with silicone lids or plastic wrap.
  6. Place the molds into a large ziplock bag, remove as much air as possible, and seal the bag using the water displacement method.
  7. Slowly lower the bagged molds into the preheated sous vide water bath and cook for 1 hour.
  8. Once done, carefully remove the molds from the water bath and let them cool for a few minutes before unmolding the egg bites.
  9. Garnish with chopped fresh chives and serve warm.
