- 300g fusilli pasta
- 3 large red bell peppers, roasted and peeled
- 150g goat cheese, crumbled
- 2 cloves garlic, minced
- 2 tablespoons olive oil

- Cook the fusilli pasta according to the package instructions until al dente. Drain and set aside.
- While the pasta is cooking, preheat your oven to 400°F (200°C). Place the red bell peppers on a baking sheet and roast for about 20 minutes, turning occasionally, until the skins are blistered and charred.
- Remove the roasted peppers from the oven and place them in a bowl. Cover with plastic wrap and leave to steam for 10 minutes. This makes the skins easier to peel.
- Peel the skins off the peppers, remove the seeds, and chop the peppers into chunks.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the roasted red peppers to the skillet and cook for another 3-4 minutes. Season with salt and pepper.
- Toss in the cooked fusilli pasta, and stir until well coated with the roasted red peppers.
- Remove the skillet from the heat and gently fold in the crumbled goat cheese.
- Garnish with fresh basil leaves and serve immediately.
