Ingredients
- 1 jar grape leaves, drained and rinsed
- 1 cup long-grain rice
- 2 medium onions, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 2 medium tomatoes, finely chopped
- Juice of 2 lemons
- Salt and pepper to taste
- 1 cup vegetable broth
- 2 cups water
- Lemon wedges and fresh dill for garnish
- Yogurt sauce for serving

Instructions
- In a large bowl, combine the rice, onions, dill, parsley, mint, olive oil, tomatoes, lemon juice, salt, and pepper. Mix well.
- Prepare the grape leaves by rinsing them thoroughly under cold water. Pat them dry with a paper towel.
- Place each leaf, shiny side down, on a clean surface. Add a tablespoon of the rice mixture in the center of the leaf. Fold the sides over the filling and roll up tightly, but be gentle to avoid tearing the leaves.
- Arrange the rolled dolmas in a single layer in a large pot, seam side down. Pack them tightly together so they don’t unravel while cooking. You may need to make multiple layers.
- Pour the vegetable broth and water over the dolmas until they are almost covered. Place a heatproof plate on top to keep the dolmas submerged.
- Bring the liquid to a boil, then reduce the heat to low and simmer, covered, for about 45 minutes, or until the rice is fully cooked.
- Remove from heat and let the dolmas cool to room temperature. Garnish with lemon wedges and fresh dill before serving.
- Serve with yogurt sauce on the side.
Helpful Tips
- If you’re new to rolling dolmas, don’t worry! Practice makes perfect. Try wrapping a few leaves without filling first to get the hang of it.
- Feel free to add minced garlic or other fresh herbs to the rice mixture for extra flavor.
Storage Instructions
Leftover dolmas can be stored in an airtight container in the refrigerator for up to 3 days. They can be served cold or gently reheated.

Ingredient Substitutions
If fresh herbs are unavailable, dried herbs can be used instead. Use 1 tablespoon of dried dill, parsley, and mint.
Pairings
Dolmas pair wonderfully with a side of Greek salad, toasted pita bread, and a refreshing glass of mint lemonade.
