Helpful Tips

  • Make it Vegetarian: Swap the chicken for extra beans and use vegetable broth instead of chicken broth.
  • Quick and Easy: Use pre-cooked rotisserie chicken to save on time.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
  • Substitutions: If you’re out of fresh lime, bottled lime juice works just as well. You can also use any type of canned tomatoes you have on hand.

Pairings

This soup pairs beautifully with a side of warm, crusty bread or a generous slice of cornbread. For drinks, consider a chilled glass of white wine such as Sauvignon Blanc, or for a non-alcoholic option, a refreshing hibiscus iced tea.
